One Grain at a Time: Maldandi Jowar — The Summer Staple That Built Maharashtra

If you grew up in rural Maharashtra, or if your grandparents did, there is a good chance bhakri was the centre of the daily meal. Not roti. Not rice. Bhakri — the thick, unleavened flatbread made from jowar, patted by hand rather than rolled with a pin, cooked on a dry tawa until the edges lift and the centre puffs slightly.

Jowar is sorghum. Sorghum is one of the five most important food crops in the world by calorie production. And within the many varieties of jowar grown across Maharashtra, Maldandi stands apart.

The Maldandi Difference

Maldandi is an indigenous jowar variety developed and maintained in the dryland farming belt of southern Maharashtra — Solapur district primarily, extending into parts of Latur and Osmanabad. It is tall (the plant can reach 2.5 to 3 metres), late-maturing (harvest is typically in October or November, later than most commercial sorghum), and lower-yielding than hybrid varieties.

What it has that hybrids do not:

Softer endosperm: The centre of the Maldandi grain is naturally softer than most jowar varieties. When ground into flour and mixed with hot water (the traditional bhakri method), it forms a cohesive, plastic dough that can be hand-patted without splitting. Most commercial hybrid jowar flours cannot be hand-patted — they crack at the edges. This is why Maldandi bhakri has a texture and flexibility that is genuinely unachievable with generic jowar flour.

Higher resistant starch: Maldandi grain has a higher proportion of resistant starch — starch that passes through the small intestine largely undigested and acts more like fibre, feeding gut bacteria and creating a slower glycaemic response.

Naturally gluten free: All jowar is gluten free. For families managing gluten sensitivity or simply choosing to reduce gluten, Maldandi jowar flour is a traditional staple that has never required modification to serve this purpose.

Drought and heat tolerance: Maldandi was developed for Solapur's conditions — semi-arid, hot summers (40–45°C in May and June), and rainfall concentrated in the monsoon months with nothing for the rest of the year. The grain is adapted to stress. This stress adaptation is part of why it has developed the nutritional density it has.

A Dryland Crop With a Rich Agricultural History

Jowar has been grown in India for at least 3,500 years — some estimates push the date of sorghum cultivation in the subcontinent to 2,000 BCE. It is one of the crops that fed the Deccan plateau before irrigation made rice and wheat viable at scale. Entire districts of Maharashtra, Karnataka, and Andhra Pradesh ran on jowar and bajra for centuries — not as a food of poverty but as the regional staple, eaten by farmers, craftspeople, and ruling classes alike.

The green revolution shifted this. High-yield hybrid jowar varieties produced more per acre. Commercial bhakri moved to commodity jowar. Maldandi, which yields less but performs better in true dryland conditions without irrigation, became increasingly marginal.

Sprouted vs Regular Jowar Flour: The Processing Question

Regular flour: The grain is washed, sun-dried, and stoneground. The flour retains the full fibre and starch structure of the whole grain. It is appropriate for bhakri, thalipeeth, jowar roti, and preparations where the grain's body and flavour are the point.

Sprouted flour: The grain is soaked, allowed to germinate briefly, sun-dried, and then stoneground. Sprouting activates enzymes that break down phytic acid (improving mineral absorption), partially pre-digest some of the starches (making the flour somewhat lighter and easier to digest), and create a very slightly sweeter, more complex flavour profile. Sprouted jowar flour is well-suited to dosa batters, porridges, and preparations for people with compromised digestion.

How to Make Bhakri That Actually Works

The traditional bhakri technique is specific. The flour is mixed with boiling water — not cold, not warm, boiling — in roughly a 1:0.8 ratio (one cup flour, slightly less than one cup boiling water). The hot water gelatinises some of the starch immediately, which is what gives the dough its pliability.

The dough is worked quickly while hot, formed into a ball, and patted on a wet palm surface — not rolled with a pin. The patting technique is regional and takes practice. If you cannot hand-pat, rolling with a pin works, but the resulting bhakri is thinner and less characterful.

The bhakri is cooked on a dry (ungreased) tawa on medium heat, turned once the bottom develops a light crust, and then placed directly on the flame for 30–40 seconds to create the blistered, slightly charred surface that is bhakri's signature. Remove, apply ghee immediately, eat with thecha (green chilli chutney) and dal.

This is the meal that fed Maharashtra for thousands of years. It still does.

The Sustainability Argument for Traditional Varieties

Maldandi jowar is a rain-fed, dryland crop. It grows without irrigation in Solapur's punishing conditions. In an era of increasing water scarcity across the Deccan plateau — where the Bhima, Krishna, and Sina river basins are under severe pressure from irrigation demands for water-intensive crops like sugarcane — the argument for dryland millets is not sentimental. It is hydraulic.

One tonne of sugarcane requires roughly 1,500 litres of water to produce. One tonne of rain-fed jowar requires roughly 400 litres — and that water falls from the sky rather than being extracted from already-stressed aquifers.

A supply chain that buys Maldandi jowar from Solapur farmers is not just making a nutritional choice. It is supporting a farming system that keeps Solapur's groundwater intact for future generations. This is the sustainability argument that most food brands do not know how to make — because it requires knowing the specific crop, the specific geography, and the specific water economics of the region where food is grown.

Jowar in the Modern Kitchen Beyond Bhakri

The bhakri is the essential Maldandi jowar preparation. But jowar flour is more versatile than the bhakri tradition suggests:

Jowar dosa: Mix jowar flour with water, a small amount of urad dal batter, and salt. The dosa is thinner and more crisp than a wheat dosa. The flavour is earthy and nutty.

Jowar upma: Use jowar rava (coarsely ground jowar) in place of semolina for a gluten-free upma with significantly more fibre and a more complex flavour.
